Instructions
Sourdough can be a tricky bread to make. It is best to add water to recipes so that the dough is just wet enough to come together. Knead until dough can be stretched about 1 inch before breaking.
To feed the starter, add equal parts flour and water. It is best to feed the starter 2-3 times over about 6-8 hours before using. Always use and allow the starter to do its thing at room temperature.
For bread, let dough rise for 6-8 hours, or overnight. Make in to desired shape and let rise again for 3-4 hours.
For pizza dough, stretch in to pizza crust after kneading. You can also refrigerate or freeze until needed.
