Recipe
4 cups water
3 cups roasted and peeled green chilie, chopped
1 - 14 oz can whole tomatoes, crushed with juice
1 clover garlic, minced
1 tablespoon bacon fat
2 tablespoons flour
Cooked pork, beef or turkey
Salt and pepper to taste
Instructions
In Dutch oven or heavy pan, heat bacon drippings until hot. Add flour until it looks like Elmer’s glue. You may not need all the flour. Brown mixture until dark brown; if you don’t brown well enough, chile will look chalky. Add water, whisking until all lumps are gone. Add tomatoes with juice, chilies, garlic and salt. At this point, chile may still be too thick; If so add a little more water; Not too much. Simmer for 10 minutes with meat.
